The mastic tree (Pistacia lentiscus)
An expansive shrub thriving in the Mediterranean, the mastic tree, or Pistacia lentiscus, is resistant to drought but sensitive to frost. It belongs to the Pistacia family, and its leaves enrich soil. Though considered a nuisance in cultivation, it serves reforestation and biodiversity. Recognized for its therapeutic benefits, the mastic tree is less known in gastronomy. Infusing its fruit in extra virgin olive oil creates a unique product for diverse culinary applications.
